For our first experience, we will head to Santiago Matatlan, the Mezcal Capital of the World. Here, you will be part of the process of making mezcal. You will cut agave, taste cooked maguey, pack your own bottle and get to know our ripened mezcal cava. But the most amazing thing hardly comes, and it is our tasting of more than 12 different Mezcales. Any of you like it? We can try it again. And finally, we will visit the maguey fields where we will discover why it is such a noble plant. You take care of enjoying and taking photographs, that teach you and have fun we will take care of.

I am originally from the Zoque ethnic group of the Chimalapa community, Isthmus Region, Oaxaca state, I come from a chocolate family by tradition, here I can share my experience and knowledge that I have acquired over the years. In honor of my community, we have decided to call the project Chima, which in the Zoque language means “jicara”. Our experience is an educational tour to learn about the culture of mezcal and all the tradition that surrounds it. We will begin our trip starting from the center of the city of Oaxaca and we will visit the towns of Mitla and Matatlán. There we will take a walking tour through our majestic agave fields with thousands of specimens, where we will be able to learn more about this plant, as well as having enough time to do a couple of activities and of course the best photographs. Then we will continue to an artisan mezcal distillery to learn step by step, the entire artisan process of making our drink. At the end of the tour, we will have an unlimited tasting of different varieties of mezcal. Finally, we will share a traditional Oaxacan meal at a local restaurant, already included, and of course, More Mezcal!

Our exciting half-day journey starts when we meet you at your hotel's lobby. A certified bilingual guide will take you through the history and culture of Monte Albán, which is a major urban center built by the Zapotec Culture. It is the most important archaeological site in Oaxaca, and it has been proclaimed Cultural Heritage of Humanity along with the City of Oaxaca by UNESCO on December 11th, 1997. The journey ends around 12:00 p.m., when we drop you off downtown, at your hotel's lobby. Just in time to taste a delicious lunch at one of our local restaurants

This cooking class is developed through deep research with people specialized in pre-Hispanic food, we seek to spread the heritage value of Oaxaca vegetarian food. Together with a traditional Cook we will tour the neighborhood and buy the freshest products for our dishes.

Through the knowledge of a local chef, you will learn about the cuisine of the region and cook three typical dishes of the region, as well as accompany your food with sauces and make your tortillas in a traditional comal. Vegetarian menu available on request.
