Our first stop is Teotitlán del Valle, where we’ll visit an artisan cooperative dedicated to preserving the ancestral techniques of wool dyeing and weaving. From there, we’ll head to my picturesque hometown of Mitla—surrounded by beautiful mountains and agave fields. Driven by a desire to share my culture and traditions with you, I’ll guide you through these majestic agave landscapes so you can learn more about the plants and discover why mezcal comes in such a wide variety of flavors. There will be plenty of laughter and photo opportunities along the way. Afterward, we’ll visit our family distillery to see the production process step-by-step and witness the passion that goes into making it. If you visit Oaxaca, you must visit Hierve el Agua. Hierve el Agua is a natural scenery of petrified waterfalls. The first thing we do on the tour is to go directly to Hierve el Agua as our first stop. We stay there for 3 hours to have enough time to enjoy the natural wonders of Hierve el Agua without rushing. In this class, you will learn about the origins of cacao, where it is produced, and its importance throughout the history of Mexico and Oaxaca. We will explore different types of cacao pods and their unique characteristics, connecting you to the roots of this iconic ingredient. You will then create your own artisanal Oaxacan chocolate, learning each step of the process—from roasting and peeling to grinding and transforming cacao into oaxacan chocolate. We work closely with local producers to ensure an authentic and high-quality experience. Along the way, you will also learn how chocolate is traditionally enjoyed in Oaxaca, both as a drink and as a food, giving you a deeper appreciation for its cultural significance.
