The fourth place is the house - workshop of a hip or waist loom craftsman in Santo Tomas Jalieza. Our experience is an educational tour to learn about the culture of mezcal and all the tradition that surrounds it. We will begin our trip starting from the center of the city of Oaxaca and we will visit the towns of Mitla and Matatlán. You are invited into a Zapotec family home where weaving is part of everyday life. At Casa de los Angeles, this experience is a personal cultural exchange guided by a native artisan who carries forward traditions learned from his elders. This is not a staged demonstration, but a living practice rooted in community, identity, and ancestral knowledge. You will learn about natural fibers, cochineal, and plant-based dyes prepared using traditional techniques. Working on a traditional loom, you will experience the rhythm and symbolism woven into each textile while creating your own small piece. The experience concludes with a homemade meal prepared with local ingredients — an opportunity to share stories, conversation, and a deeper understanding of Zapotec culture in an intimate and respectful setting.

Casa Crespo is Oaxaca in its kitchen. Tradition lives there, where chef Oscar Carrizosa, (originally from the Mixteca region) mixes the ingredients of the 16 ethnicities of Oaxaca with the original seasoning that he inherited from his grandma. It´s the perfect place to get to know the flavors and aromas of Oaxacan food in the classes that Oscar gives. Oscar, who is very friendly, also shows how to smell and identify the aromas that come of the dishes. He presents menu options and the students decide what they would like to cook. There is no fixed menu. He teaches how to cook 3 types of tortillas, 3 types of salsas, an appetizer, soup, mole, dessert and drink. Dishes that strive to remain in the taste buds and memory of those who love good eating.

Through the knowledge of a local chef, you will learn about the cuisine of the region and cook three typical dishes of the region, as well as accompany your food with sauces and make your tortillas in a traditional comal. Vegetarian menu available on request.

This cooking class is developed through deep research with people specialized in pre-Hispanic food, we seek to spread the heritage value of Oaxaca vegetarian food. Together with a traditional Cook we will tour the neighborhood and buy the freshest products for our dishes.
